Guess whose back? I know I know, it’s been a while. I hope you’re all safe and well. 

Not entirely sure on where to begin with talking about this bizarre time we are going through so I thought I would write a little post on something I am enjoying whilst in self-isolation and that is cooking/baking! 

I don’t know about you but I find cooking is a way of keeping busy, showing your creative side and making something you are proud of - you also get to eat some good food afterwards, win win. Today’s recipe is for a banana bread, easy to make with very little ingredients. If you fancy making a naughty (but nice) treat, give this one a go. It’s so good, I promise 😊


190g of plain flour 
150g of brown sugar 
1 teaspoon of ground cinnamon 
1 teaspoon of baking soda 
3 medium ripe bananas 
55g of butter 
1 egg 
1 teaspoon of vanilla extract 

Pinch of sea salt 
Chocolate chips

  1. Heat your oven to 180 degrees (fan). Pop a bit of oil into your loaf tin, make sure it has a light covering then set aside.
  2. Put the flour, baking soda, cinnamon and sea salt (if wanted) into a bowl and put aside.
  3. In a separate bowl, mash the bananas with a fork and then add the melted butter. Stir in the brown sugar, egg, vanilla extract and chocolate chips (if wanted). Mix up until smooth.
  4. Stir the dry ingredients into the wet but don’t over mix as your bread could end up being flat and heavy.
  5. Pour the batter into your loaf tin. Bake for 45 minutes. Check its cooked by sticking a toothpick (or a knife) into the middle of the bread, if it comes out clean then its all done.
  6. Remove the tin from the oven and pop on a wire rack. Let the bread cool down in the tin and then run a knife around the edges to remove from the tin. Let the bread cool on the rack until slightly warm. Cut into slices and ENJOY!
