Happy Sunday! I hope you all had a fabulous weekend.
On a Sunday, I do
like to have a lazy day and recharge ready for the new week but today, I decide
to be slightly productive. Instead of spending my day slumped in front
of the TV, I got a little creative in the kitchen and make some lemon
drizzle cupcakes! Even though I’m partial to a slab of chocolate cake, I do
love a good ol’ slice of lemon - sweet but also light and refreshing! These
little treats were incredibly easy to make and only took me 10 minutes so why
don’t you treat yourself?
I found this recipe on the Asda Good Living website
but I did change a couple of things along the way so I will let you know
exactly what I did below:
What you need:
- 125g
self-raising flour
- 1 level tsp
baking powder
- 125g butter,
softened
- 125g caster
sugar
- 2 large
free-range eggs
- 3 tbsp of lemon
juice
- A sprinkle of
icing sugar
The method:
1. Pre-heat
the oven to 180C/160C Fan/Gas 4 and line a bun tray with 8 muffin cases.
2. Pop the
flour and baking powder together in a large bowl. Then add the butter, sugar
and eggs. Make sure the butter is soft otherwise it is difficult to mix until
smooth.
3. Add the
lemon juice and beat with a wooden spoon until there are no lumps. Scrape the
sides of the bowl with a spatula to make sure you haven’t missed any
ingredients.
4. Put the
mixture in the paper cases, making sure they're all about the same size. Bake
for 20 minutes until the tops spring back when pressed.
5. Then dust
over a light sprinkling of icing powder
HEY PRESTO, its as easy as
that! If you want to make them even tastier (and a little bit naughty), you can
add a light lemony icing on top once cooled. But, there you go - short but
